Creating Standard Recipes
Abstract
A country's cuisine is one of the most important cultural indicators of that country. Societies attach importance to studies using different methods on culinary culture and dishes in order to protect these cultural characteristics, keep them alive and leave a legacy to future generations. One of these studies is the standardization of food recipes. This study aims to develop standard recipes for forgotten or nearly forgotten Kyrgyz traditional dishes. Within the scope of this descriptive research, a five-stage process was followed in the process of accessing and standardizing the recipes of forgotten Kyrgyz dishes: "scanning", "analysis", "layering", "application", "evaluation and interpretation". As a result of the evaluation; Recipes for the dishes that reached the highest score in total were accepted as the "standard recipe" of that dish. In order for the Kyrgyz people to start using the standard recipes developed as a result of the research again, it is suggested that local governments and non-governmental organizations organize events such as festivals, cooking courses and workshops for the Kyrgyz people, and promote these dishes to tourists by including these dishes in the menus of tourism establishments operating in Kyrgyzstan.
